The Ultimate Jamaican Comfort Side
A golden, crispy, and fluffy Caribbean staple. Whether paired with Ackee and Saltfish for breakfast or enjoyed as a snack, these “fry dumplings” are a must-have for any authentic island meal.
- Prep time: 10 minutes
- Cook time: 15 minutes
- Yields: 8–10 dumplings
Ingredients Needed
- 2 cups All-purpose flour
- 1 ½ tsp Baking powder
- ½ tsp Salt
- 1 tbsp Sugar (optional)
- 2 tbsp Cold unsalted butter (cubed)
- ¾ cup Cold water (add gradually)
- Vegetable oil for frying
Preparation Instructions
- Mixing the Dough Sift the flour, baking powder, and salt into a large bowl. Add the sugar if using. Rub the cold butter into the flour with your fingertips until the mixture resembles coarse crumbs.
- Kneading Make a well in the center and gradually add the water. Mix until a firm, non-sticky dough forms. Knead gently for 2–3 minutes until smooth. Cover and let the dough rest for at least 10 minutes (this makes them fluffier).
- Shaping Divide the dough into equal-sized balls (about the size of a golf ball). Roll them between your palms to smooth them out, then slightly flatten them with your thumb to ensure the center cooks through.
- The Golden Fry Heat about 1 inch of oil in a heavy-based skillet over medium-low heat. Carefully place the dumplings in the hot oil.
- The Slow Turn Fry for 12–15 minutes, turning occasionally. You want a deep golden-brown crust and a cooked, airy center. Adjust the heat if they are browning too fast on the outside while remaining raw inside.
- Serving Drain on paper towels and serve hot.
